Steamed Chocolate Pudding

An old English and Freeman favorite. It is an incredible chocolate dessert. Yum!

There are two toppings. The one with the raw egg is the original but because of health issues with raw eggs, not the one we choose to use. If you don't have the time and your standards are flexible, you can cook the dough in small tins for about 13-15 minutes at 350.

Chocolate Pudding
 1 Egg
 1 cup Sugar
 2 tbsp Softened butter
 2 Squares melted chocolate
 1 ¾ cups Sifted flour (or cake flour)
 1 tsp Salt
 ¼ tsp Cream of tartar
 ¼ tsp Baking soda
 1 cup Milk
Sauce - modified
 1 pt Whipping cream, 1/2 C powdered sugar, 1 tsp vanilla
Sauce - original
 1 Egg
 1 tbsp Melted butter
 1 cup Sugar
 1 tsp Vanilla

Cream eggs, sugar, butter and melted chocolate.

Sift together dry ingredients.

Alternate adding dry ingredients and milk to the wet mixture.

Steam for 2 hours.

New sauce: Whip the cream until stiff. Fold in vanilla and powdered sugar.

Original sauce: Beat the egg until foamy. Blend in melted butter, sugar, vanilla and allow to cool. Fold in the cream and whip.
