Soft Salted Caramels

Not especially easy, but very tasty. Wrapping the candies take a bit of time. You can order cellophane squares - pre-cut - saves quite a bit of time.

 1 cup butter
 2 ¼ cups brown sugar
 1 cup light corn syrup
 15 oz condensed milk
 1 tsp vanilla

Melt butter. Add the brown sugar and salt. Stir in the corn syrup, mixing well. Gradually add the milk, stirring constantly.

Cook and stir over medium heat until candy reaches firm-ball stage (245 degrees) – about 12 to 15 minutes. If you don't have a thermometer, test if it is at firm-ball stage by dropping a teaspoonful of hot syrup into a small bowl of ice water. The ball won’t flatten when removed from the water; it remains pliable and will flatten out if squeezed between your fingers.

Remove from heat, and add vanilla. Pour into a parchment lined 9x9 inch pan. Sprinkle with Maldon salt, if desired. Cool, cut into approximately 1 inch squares, and wrap in wax or cellophane paper.
