Mexican Chicken

You can layer the tortillas or roll like enchiladas.

 3 lbs chicken, cooked and shredded
 1 onion, sliced
 8 ounces green chilis
 2 tbsp vegetable oil
 12 ounces enchilada sauce
 1 cup chicken broth
 1 cup half and half
 2 cups Monteray Jack cheese
 flour tortillas
 1 cup sharp cheddar cheese

Sauté onion and green chilies in oil until soft. Add half and half, broth (optional), Monterey Jack cheese, and enchilada sauce. Stir until melted. Add chicken.

Put layer of tortillas in bottom of greased 3 quart casserole dish. Alternate layers of chicken mixture and flour tortillas.

Top with cheddar cheese. Bake uncovered at 300 degrees until heated through, 20-30 minutes.
