Buttermilk Scones

These scones freeze well. Freeze the dough on a tray before they are baked. You can then pull just a few out of the freezer and bake only the number you need for freshly baked scones with a moment’s notice. Just add a few minutes to the baking time.

Pastry
 2 cups all purpose flour
 ¼ cup granulated white sugar
 1 ¼ tsp baking powder
 ¼ tsp baking soda
 ¼ tsp salt
 ½ cup butter
  cup buttermilk
 1 tsp vanilla
Fillings
 1 cup frozen fruit, cinnamon chips, or chocolate chips

Preheat oven to 400 degrees and place rack in middle of oven. Line a baking sheet with parchment paper.

In a large bowl, mix the flour, sugar, baking powder, baking soda and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. Add the buttermilk and vanilla extract to the flour mixture and stir just until the dough comes together. Do not over mix.

Transfer the dough to a lightly floured surface and knead the dough gently with add-in ingredients.

Form into a log and cut log into fourths, then cut each of those rectangular fourths in half making slightly square shaped pieces, then cut these in half making triangles. This should make 16 small scones. Place on parchment lined baking sheet and bake.

Bake for 10-15 minutes or until golden brown. For esthetically pleasing scones, sprinkle with sugar in the raw a few minutes before they are done baking.
