Broccoli Cheddar Potato Soup

This is a flavorful, classic soup. Serve with roasted broccoli as a garnish, or with crusty bread.

 2 tbsp olive oil
 2 large shallots, thinly sliced
 4 cloves garlic
 2 lbs broccoli, stems peeled and chopped and florets cut into 1 inch pieces (should be 5 cups florets)
 3 yukon gold potatos
 10 cups freshly shredded white cheddar
 1 tsp lemon juice, plus grated zest for serving

In medium saucepan, heat oil over medium-high heat. Add shallots, garlic, broccoli stems, potatoes and a pinch of salt. Cook for 3-4 minutes.

Add 5 cups of water, and season with salt. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 10 minutes.

Add broccoli florets and cook until tender, about 8-10 minutes. Let cool slightly. Add cheese and blend. Season to taste.

If you are garnishing with roasted broccoli and/or cheesy bread, heat oven to 400 degrees. Roast broccoli with garlic, salt, pepper and oil for 15 minutes, turning them over about halfway. White cheddar on bread will also take about 15 minutes to toast, so they can be roasted together.
